Vinification

Selected grapes of two varieties from our Kondoli vineyards are separately hand-harvested at the optimum of their maturity. Softly de-stemmed grapes are cooled down to t 4-6 °C and then gently pressed in the pneumatic press. Later, fermentation starts slowly at precisely controlled temperature (15-18 °C) in stainless steel tanks.The Final blend is made after 3-4 month of separate aging. Minimal filtration and bottling competes the process.
